Vinegar, Resplendent
On January 19, 2011 by Liz TagamiI participated in a comparative vinegar tasting this morning, and as I was clearing the tasting cups captured the sun on some of the samples.

How is vinegar tasting? Have tried wine and oil but never heard of vinegar tasting; sounds interesting

This tasting was to approve some samples and we sipped directly from cups to check
– balance between acid and sugar
– complexity / nuance (fruitiness from the grape must, vanilla from the oak casks, etc)
– viscosity and color
These were very nice and make a good digestf.
